I was so excited to try making a healthier cake when my friends about to come over to our house. And one of them, celebrating his birthday on that month. So, my mind said – oh, what cake should I try to make? Not a wrong gift at all, right?!? Yes, I love cooking/baking for loved ones πŸ˜… ❣️

And after many searching of easy to make and easy to find ingredients for the cake – I finally found,
Quinoa Chocolate Banana Cake
Inspired by Nest and Glow

As my routine – I always want to share the health benefits of the main ingredients, so here you go:
Quinoa – most protein-rich food and high in fiber. Most importantly, gluten-free. πŸ˜€
Banana – good for the skin and heart.
Cacao Powder – high in magnesium, good for brain and heart.
Chia Seeds – high in fiber and may help to lose weight.
Raisins – high in fiber and antioxidants.
Shredded Coconut Unsweetened – helps to improve digestion, heart, and lose weight.

P.S. You don’t have to use organic ingredients as what it is shown below – it’s a preference πŸ˜‡

Let’s get started then…

Ingredients

β–ͺ️ 2 bananas (ripe or medium ripe)
β–ͺ️ 1 cup / 180g Quinoa, soaked overnight
β–ͺ️ Β½ cup / 50g Raisins
β–ͺ️ Β½ cup / 50g Cocoa/Cacao powder
β–ͺ️ Β½ cup / 50g Shredded Coconut Unsweetened (I used Bob’s Red Mill)
β–ͺ️ 1 tsp Vanilla
β–ͺ️ 3 tbsp Chia seeds, soaked in 9 tbsp water
β–ͺ️ pinch of Salt
β–ͺ️ 1 cup Water

TOPPING

β–ͺ️ 2 bananas (ripe or medium ripe)
β–ͺ️ 1 tbsp Cocoa/Cacao powder
β–ͺ️ 2 tbsp Nuts or seeds, or can be mixed nuts (as per your preference)

Instructions

  1. Soak Quinoa min 10 minutes or up to 1 hr (preferably overnight), drain and rinse.
  2. Soak the chia and set aside, add it as the last ingredients when everything else in your blender or bowl.
  3. Blend smooth all the ingredient for the banana bread and pour into a greaseproof paper-lined tin.
  4. Bake for an hour at 190C / 375F until a toothpick comes out mostly clean.
  5. Set aside and the bread will be firmer as it cools down.
  6. For Icing – mash two bananas with 2 tbsp of cacao powder.
  7. Spread the icing on the cooled quinoa banana bread and top with chopped nuts or seed.
  8. Suggested to consume within the next 3 days – or else you can pack it nicely and place it in your freezer for later and just reheat it.
