Most of the time when I’m sort of lazy and don’t want to go out to buy food or order online. I will normally just look into our fridge and cabinet and see what I can make with all the vegetables and other stuff we have.
And so looking at whatever we have in the fridge and thought, okay I can make pasta out of these ingredients…I called it Tomato Pasta with Sudjuk
You might wonder what Sudjuk is…It is a dry, spicy sausage that is eaten from the Balkans to the Middle East and Central Asia. The one that we got, from Bulgaria π§π¬ . It is usually very savory with a mild taste of pepper, thus I don’t need to add more salt and pepper when making this dish…
And though I can be very particular with the number of calories that I take, once in a while I let loose…especially if we need to clear whatever food we have in our fridge π
So, let’s get started!
Just about 6 ingredients, you can already make a great dish for lunch or dinner and it’s for sharing π
Ingredients
βͺοΈ 75 gms of Sudjuk (you can also have either Chorizo, Sausage, Longganisa as an alternative)
βͺοΈ 10 oz or 284gms Brown Rice Pasta (you can have any type of pasta you have at home)
βͺοΈ 5 tbsp Tomato Puree (You can also have tomato sauce or Ketchup, whichever available)
βͺοΈ 50-75 gms of Tomato Cherry Honey (You can also have 1-2 medium size tomato β€οΈ)
βͺοΈ 4 cloves of garlic (chopped)
βͺοΈ 1 small onion (chopped)
βͺοΈ 1/2 cup of water
Instructions
βͺοΈ In a heated pan, saute garlic and onion along with Sudjuk until Sudjuk’s oil comes out; the same thing goes with Longganisa or Chorizo and as for Sausage you can add first in a heated pan 1 tsp of oil. And let it cook in medium-low heat for about 2-3 minutes or until the meat cooked through.
βͺοΈ In the meantime, for the pasta; please follow the instructions accordingly from the packaging. If not sure, bring a large pot of water along with 1 tsp of oil and pinch to 1/2 tsp of sea salt to boil. Add pasta, stir to make sure pasta doesn’t stick together, let it boil or until pasta is al dente. Remove from the heat and drain the water. Set aside.
βͺοΈ Back to the sauce; add the Tomato Cherry Honey or Big Tomato, stir and slowly add the puree (ketchup/tomato sauce) along with 1/2 cup of water for about 3-5 minutes or until the sauce is thickened. Add salt and pepper to taste in case you have Longganisa/Sausage.
βͺοΈ Add the pasta to the pan and stir until the pasta is fully coated with the sauce.
βͺοΈ Let it cool down for about 2 minutes and ready to serve!
Can add chili flakes if desired to bring some spicy flavor.
