When making a dish or dessert, I always start with a thought of – it should be minimal ingredients, easy to prepare, and definitely easy to make…

I love to use ripe bananas not only because of its many healthy benefits but also easy to find in supermarkets and importantly – affordable. This cake is definitely my first attempt of making it and luckily it turned out moist, yummy, and so delish ❤️😍😋

This Gluten-Free Peanut Butter Banana Cake is full of nutritious ingredients and you might be surprised with the quality of taste containing no butter, less flour, and less eggs – it tastes awesome 😋

If you already baking some stuff at home, probably you’ll have all the ingredients needed to make this cake, and those are:

• Almond Unsweetened Milk- Non-Dairy Milk
• Maple Syrup
• Gluten-Free Flour
• Bananas
• Eggs
• Shredded Unsweetened Coconut
• No Salt Peanut Butter
• Vanilla Extract
• Baking Powder
• Salt
• Dark Chocolate Droplets

TIPS:
• When it comes to sweetness; you can always adjust the measurement of maple syrup.
– I am not a big fan of too sweet stuff thus, I always lessen the portion of any sweeteners when baking or making desserts. But again, it’s individual preference. For me – I always encourage or choose the healthier options 😉
• The more ripe the bananas the better, as these would give more natural sweetness to your cake.
• And you don’t have to follow the same brands’ ingredients as below, you can definitely use the brands that you trust for baking 😇

So, let’s get started 👩🏼‍🍳

TOTAL TIME: 35-40 Minutes
YIELD: 9 Slices

Ingredients

    • 3 medium ripe bananas
    • ¾ cup no salt crunchy peanut butter (I used Pic’s Peanut Butter)
    • 2 large eggs
    • ¼ cup maple syrup (You can definitely adjust the portion according to your sweetness preference)
    • 2 teaspoons vanilla extract
    • 1/2 tablespoon dairy-free milk of choice (I always use Alpro Almond unsweetened milk)
    • 1 cup gluten-free flour (I used Bob’s Red Mill Millet Flour)
    • 1-2 teaspoon baking powder
    • 1/2 tablespoon shredded unsweetened coconut (optional)
    • ½ teaspoon cinnamon
    • ¼ cup Dark Chocolate Droplets (or any of your preferred chocolates)

Instructions

  1. Preheat oven to 350 degrees or 176 degrees in celcius. Set the baking 8×8 pan covered with parchment or baking paper.
  2. In a large bowl, mix together the mashed bananas, peanut butter, eggs, maple syrup, vanilla extract and milk of choice until smooth. Doesn’t have to be in chronological order, so long you mix all these together until smooth then, you’re good.
  3. Next, add in the gluten-free flour, baking powder, cinnamon and salt -mix until smooth. Add droplets of dark chocolates and shredded unsweetened coconut (optional) and mix again until smooth.
  4. Bake 20-25 minutes or until toothpick comes out clean. Cut into 9 slices, serve it hot/warm or cold – your preference. I always prefer hot/warm 😍
