A healthy, delicious, so quick and easy to prepare and make. This recipe can be vegan as well if you’re only going to use water or vegetable stock. As per my recipe, I’ve used chicken stock.
So why carrot and sweet potato? Because of its natural sweet taste and both have great sources of vitamins and nutrients…I thought that we normally tried tomato, onion, squash soup but very rarely with this combination (at least in my experience).
Well, for me I always love to try and experiment with something new. I just felt that with this combination, it definitely will be a great soup. Adding turmeric and paprika powder will definitely add some kick or warm feeling though it’s always hot in Singapore; I love spicy dishes anyway – so chilli, paprika powder, and chilli flakes sort of always included in my home cooking π
With very minimal ingredients and with less than an hour of cooking, I am sure you can also make this at home…
So let’s get started!
TOTAL TIME: 45mins to 1HR
YIELD: 3 SERVINGS
Ingredients
βͺοΈ 1 tsp Olive Oil
βͺοΈ 4 medium-sized carrots ( TournΓ©e or Dice Cube Cut)
βͺοΈ 2 medium-sized sweet potatoes (cut into 4 pieces each)
βͺοΈ 3 small red onion (chopped)
βͺοΈ 3-4 cloves garlic (chopped)
βͺοΈ 1/2 cup hot water
βͺοΈ 1 1/2 cup chicken stock or 2 cups water
βͺοΈ 1 tsp turmeric powder
βͺοΈ 1/2 tbsp combination of paprika and chili powder
βͺοΈ 1 tsp mixed herbs ( parsley, rosemary, oregano, coriander, basil, and sage) but can be any type of mixed herbs to add natural flavor
βͺοΈ Salt and Pepper to taste
Instructions
- In medium heat, add Olive oil and let it bubble until it turns hot, then lower the heat – Saute chopped garlic and onions for 2-3 minutes, frequently stir to avoid burning it.
- Add the carrots and stir, add hot water and stir again until the water boils for about 2-3mins.
- Now add the turmeric, paprika, chili powder, and stir thoroughly until the powder fully dissolved. And let it boil.
- Add sweet potatoes and chicken stock, stir thoroughly – let it cook for about 15-20 mins. or until the vegetables are soft.
- Puree it using the hand blender or in a food processor. When using the hand blender, you can do it in the same pot. But if you’re using the food processor, make sure to remove from the pot and put it back once completed.
- Season with salt and pepper to taste, and chili flakes if desired.
- Let it cool down for 1-2 mins and ready to serve with your preferred bread.
