So it’s the Banana Bread becoming a trend since the covid19 😉. I’ll take it positively – not with the virus but because that means another reason for me to love having more banana at home. After all, it definitely won’t get wasted.

I love banana so much because I can do so many things with it. And with the fact that it’s not expensive fruit but still giving you health benefits – so why not store more at home 😍. Part of me, I bake and eat consciously – I carefully look at the amount of the ingredients I use, especially something that I know won’t be good to my body if I consume it more than what my body needed, e.g., salt and sugar.

I love my Banana White and Chocolate Chip Bread. It’s not that sweet, yet moist, dense, and soft. Most of all, easy to prepare and make. My hubby and my friends enjoyed it as well 😍.

My first attempt was using white sugar and lesser than the measured white and chocolate chips. While the second one with brown sugar and the measured white and chocolate chips. I’ve also added some add-on as well, which optional—your choice 😉.

So, let’s get started…

TOTAL TIME: 1 hour and 20 minutes
YIELD: 8 slices

Ingredients

  • 2 pcs Medium Size Ripe Banana (Mashed)
  • 1/3 cup Melted Unsalted Butter (You may use Salted Butter as well)
  • 3 tbsp Brown or White Sugar
  • 3 pcs Small eggs
  • 1 1/2 cup Gluten-Free Flour (Or you may use Normal flour)
  • 1/3 cup White Chocolate Chip
  • 1/3 cup Chocolate Chip
  • 140 gms Greek Yogurt
  • 1 tsp Vanilla Extract
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  • 1 tsp Shredded Coconut (Optional)
  • 1 tsp Chia Seeds (Optional)
  • 1 tsp Flax Seeds (Optional)

Instructions

  1. Preheat the oven to 350 degrees F or 177 degrees C.

Wet Ingredients

  1. In a large bowl, add melted butter and sugar. Stir together.
  2. Then, add eggs and vanilla extract. Mix well these 4 ingredients and set aside.

Dry Ingredients

  1. In a separate bowl, add the flour, baking soda, and salt. Whisk together well. Optional to add – Chia Seeds, Flax Seeds, and Shredded Coconut.

Main Ingredients

  1. Gradually mix the dry ingredients into the wet ingredients until combined.
  2. Add in the yogurt and the mashed bananas. Mix until well combined.
  3. Gently add-in White and Chocolate chips, stir until combined.
  4. Spread evenly into loaf pan covered with parchment paper or greased loaf pan. I use the Redman or Phoon Huat Loaf Pan.
  5. Sprinkle the remaining white and chocolate chips on top of the loaf pan.
  6. Bake for 55 minutes or when a toothpick inserted into the center and sides of the loaf and comes out clean.
  7. Take out and cool the loaf in the pan for at least 10 minutes to 20 minutes before cutting it.
  8. Slice and ready to serve!

There you have it! If you think that white and chocolate chips not enough for you. You can always add more 😉. The great part of my recipe is that it’s not that sweet, so you can always add a bit more according to your preference.

Properly seal and store any leftover bread in your freezer or fridge. The loaf lasts up to 3 days. Best serve either at room temperature or warm with coffee or your preferred hot drinks 😄.
